We all know that we should be eating more vegetables on a daily basis. Unfortunately, not all of us are.

The Australian Government recommends that adults should be having at least 5 serves of vegetables each and every day. 1 serve is approximately 75 grams.

Here are 11 simple ways, that you can increase your vegetable intake;

  1. When making a bolognaise sauce, reduce the amount of meat the recipe calls for and add coarsely grated carrot, zucchini and celery. No one will even notice, especially not the kids.
  2. Cut carrots & celery into sticks and put them at eye level in the fridge. If they are ready to go, you’ll be more likely to eat them.
  3. Aim for 1 meat free day per week. If you can’t go a whole day at least make your main meal, meat free.
  4. Make a pot of soup. It doesn’t take much effort and the leftovers can be frozen for a quick easy meal, rather than ordering in.
  5. Next time you’re going to a friend’s place for dinner, offer to make and take a salad. That way you know there will be a healthy option.
  6. Keep a bag of mixed vegetables in the freezer. That way there’s no excuses when you run out of the fresh stuff.
  7. Can’t be bothered waiting for your vegies to cook. I particularly like Glads Steam Lock Microwave Bags, for moments like this.
  8. Make a colourful vegetable & chicken/lean beef stir-fry. You can use any combination of vegetables that you have in the fridge.
  9. Have a corn on the cob but remember to go easy on the butter/margarine.
  10. Make your own kebabs to cook on the barbeque. Alternate between cubes of lean meat/chicken, mushrooms, onion and capsicum.
  11. Take advantage of the warmer weather and have a salad. Add some chickpeas or chicken to make it a filling dinner.

So tell me, how are you eating yours?

    Although it’s not as beneficial as plain vegetables… I like to juice vegetables… like carrot & orange.

    And I love to sprinkle some parmasen cheese on top of Cauliflower or Broccoli

    And for the kids… mash potato faces. They seem to enjoy their veges more :)

    Fantastic Megan, For caseroles and that I also add cut up apples, it is a great way to add a bit of sweetness, pineapple also works well. In the summer I also like to keep grapes in the freezer, when your hungry or the kids are and hot, just eat them :)
